Week 23 - Mango

I decided to do Mango Salsa for Mango week.  I remembered trying it a long time ago. I could not remember if I liked it or not. My sister was sweet enough to make it for us. We both really liked it. Although I think it would be better as a garnish on something like a parmesan encrusted chicken, or even on pita chips. It was great though, even with just tortilla chips.

Mango Salsa:
         1-2 mangoes - peeled, seeded and diced
         1/2 cup chopped fresh pineapple (we used canned)
         1/2 cup black beans, rinsed and drained 
         1/2 red onion, finely chopped (our onion was really strong so we only used a 1/4)
         3 tablespoons chopped fresh cilantro
         3 tablespoons fresh lime juice
Put it all together and enjoy. (It is best if it sits for 1-2 hours to really soak in all the juices.)
